Pumpkin Pudding

‘Tis the season for pumpkin. Pumpkin pies, pumpkin bread, and of course this family favorite, pumpkin pudding. This is a Thanksgiving favorite for diners in our home, and with how quickly it can be whipped up, it is a favorite for cooks as well!
DSC_2202Ingredients:
2 boxes vanilla pudding (prepared according to package directions)
1 container whipped topping
1 can pumpkin
1/4 cup sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/4 teaspoon ginger
Directions:
Mix pumpkin, sugar, and spices in a medium mixing bowl. Mix in pudding. Fold in whipped topping. Chill and serve.
You may want to cut this recipe in half unless you have a lot of guests. I am used to cooking for a large crowd, especially at holiday seasons. I would guess that this recipe makes about 16 servings.
