This delicious layered dessert is one of Jason’s favorites. In my mind, it brings back fond memories of kindergarten snack time. Pistachio pudding and vanilla wafers were a regular snack, and I much preferred them to the Cheez-its we had so many days!
So, when our local discount grocery store started selling pistachio pudding mix by the pound, I decided to stock up and make this as a special treat for Jason. This recipe makes an 8x8 pan. Double for a 9x13.
Ingredients:
CRUST
1 cup flour
1/2 cup chopped nuts (I used walnuts, you could use whatever kind you’d like.)
2 tablespoons sugar
1 stick (1/2 cup) butter or margarine
WHITE LAYER
8 oz. cream cheese
2/3 cup powdered sugar
1/2 dish cool whip
PISTACHIO LAYER
2 packages pistachio pudding
2 1/2 cup cold milk
Directions:
Mix crust ingredients well and press into pan. Bake 15 minutes at 350 degrees. Let cool.
Beat together ingredients for white layer. Spread evenly over crust.
Whip together ingredients for pistachio layer. Spread evenly over white layer.
Refrigerate at least 1 hour before serving.

ReplyDeletePistachio nuts are my favorite as is pistachio ice-cream so I think I would love this dessert!
