It’s a once or twice a year thing.
When strawberries begin to go on sale, when they are at their cheapest, we buy a pound or two and I make this scrumptious dessert. Jason is not normally a fan of pie, but this one is in his dreams! This pie is the essence of summertime with its fruity sweetness, cool smoothness, and crispy, flaky crust.
Ingredients:
1 pie crust baked
1-2 lbs. of strawberries (I use 2 lbs. for my deep dish pie plate. If yours isn’t deep dish, 1 lb. may be enough.)
Washed,
and sliced,
1 1/2 cups water
3/4 cup sugar (you may want to make it 1 cup if you use a whole 2 lbs. of strawberries)
2 tablespoons cornstarch
1 3 oz. box strawberry gelatin
Directions:
Mix water, sugar, and cornstarch together.
Cook over medium heat until thickened.
Add gelatin and remove from heat. Let cool for 5 minutes or so.
Add strawberries. Pour into pie shell, refrigerate until set. (about 3-4 hours) Serve with ice cream or whipped topping.
