Curried Chicken with Vegetables


My sister’s fiance asked me if he could borrow some curry powder not too long back. He could eat curry every meal. So, when he and Charity were eating supper with us last week, it made perfect sense to make curry.



4 chicken breasts cut into small pieces

2 tablespoons oil

1 1/2 cups chicken broth (separated)

1 bag mixed frozen veggies  (I used broccoli, cauliflower, and carrots.)

3 tablespoons curry powder

1 tablespoon onion powder

2 teaspoons garlic powder

2 teaspoons paprika

1 teaspoon salt

2 tablespoons cornstarch

2 tablespoons  tomato sauce

6 cups rice cookedDSC_2088


Sprinkle spices on chicken. Saute in oil until meat is thoroughly cooked. Add 1 cup chicken broth and veggies. Simmer until vegetables are tender. Add tomato sauce. Mix cornstarch into remaining 1/2 cup of chicken broth. Add to curry and simmer over low heat until thickened. Serve over rice.

**** This is a rather spicy recipe. You may want to reduce the amount of curry powder.
