Easy Pineapple Upside Down Cake

I am so excited to have reached a new milestone. Sometime while I was at school today, my blog hit one hundred followers! Thanks to each of you who read, comment, and lurk in the shadows!


My daddy loves pineapple upside down cake. My husband thought that he hated it until the first time I made it. Then, he decided it wasn't so bad. When we had my parents over for a meal last week, of course, pineapple upside down cake was the dessert that popped into my mind.

Ingredients:
White, Yellow, or French Vanilla cake mix (along with eggs and oil called for on box)
1 can pineapple slices (save juice or syrup to use in place of water in cake batter)
1 jar maraschino cherries
1 stick butter (1/2 cup) melted
1/2 cup brown sugar

Procedure:
Pour melted butter into the bottom of cake pan. Mix in brown sugar. Arrange pineapple slices in pan. Put a maraschino cherry in the middle of each pineapple slice.
Mix cake according to package directions, replacing water called for with pineapple juice(You wouldn't have to do this, but it gives an extra zing!). Pour cake batter into pan over pineapple.

Bake according to directions on cake mix.

Remove from oven. Let cool for 5 minutes or so, and then flip out of pan onto serving dish. Great served with whipped topping or ice cream!

  5. My husband LOVES pineapple upside down cake! ...However, I have never made him one in the 11+ years that we have been together. (My mom always feels sorry and makes him one a few times a year.) I may just have to surprise him now though. ;)

  6. That looks so yummy! No way would my kids eat it though - they don't think that they like pineapple. Might have to tell - I mean show - them otherwise.
