Yummy Taco Soup!

I really enjoyed this recipe from Taste of Home. I omitted the diced tomatoes and used tomato sauce. I also served it with a dollop of sour cream. It was so delicious on a blustery spring day! Of course, the day I made it, it just so happened that this Ducky lady made it too! So, I waited a little while to post my recipe.


Ingredients:

  • 1-1/2 pounds ground beef
  • 1 envelope taco seasoning
  • 2 cans (15-1/4 ounces each) whole kernel corn, undrained
  • 2 cans (15 ounces each) ranch-style or chili beans, undrained
  • 2 cans (14-1/2 ounces each) diced tomatoes, undrained
  • Crushed tortilla chips and shredded cheddar cheese
  • Flour tortillas, warmed

Directions:

In a Dutch oven or large saucepan, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning, corn, beans and tomatoes. Cover and simmer for 15 minutes or until heated through, stirring occasionally.
Place tortilla chips in soup bowls; ladle soup over chips. Sprinkle with cheese. Serve with tortillas. Yield: 8-10 servings (about 2 quarts).

  1. Oh, Bethany! That looks so, so, SO good! But then... I'm a sucker for anything Mexicany. I guess I've been keeping up with your blog in reader more and not visiting so much. I should have come by! I love your scrolling blog roll, the revolvermap, and most of all the label cloud. Where can I get that awesome cloud?! Love it!
