This is what I made for dinner on Tuesday. I had leftover ham that needed to be used up, and this was the perfect use for it. As usual, I didn't follow a recipe, but just threw together what I thought would work. This time, it worked better than I expected, so I decided to share it with you.
Ingredients:
3 potatoes boiled and cubed
1 can mixed vegetables
leftover ham cubed
1 can cream of mushroom soup
1 cup of brown gravy (I used a mix to make this.)
Salt and pepper to taste.

Add all ingredients to a greased baking dish. Mix well. Cover with biscuit dough. (I used biscuit mix, and used some extra milk so that I could just spoon it over the top. You can also use canned biscuits.) Bake at 350 for about 15 minutes or until crust is golden brown.

I have never liked pot-pie of any kind, but this was good enough that I wanted seconds!

ReplyDeleteI love pot pies too. I find fewer recipes for left over ham than for chicken or beef. This was a great idea!
