Cheeseburger Soup

First, let me say that this is my own concoction. I realize Taste of Home has a recipe for cheeseburger soup, but I have never tried it. I heard someone talking about it once, decided to come up with something similar, and this is what I ending up making.

As you will see from all the parentheses, I rarely make a recipe the same way twice. I learned to be very flexible and ingenuitive living on the mission field, and that carries over to my cooking today.

5 or 6 medium/large potatoes cubed
1 carrot (I grated mine, chopped would work also.)
1 chopped onion (I use minced onion because my husband has alliumphobia ~ fear of garlic or onions)
2 stalks chopped celery (I was out of this today, so skipped it.)
1 lb. ground beef (Ground turkey also works.)
Cheese (either Velveeta or a cheddar cheese sauce like I used.)
Seasoning Salt

Boil the potatoes in water or beef broth if you so choose.

Add onion, celery, and carrots when potatoes are nearly cooked. Drain water.

In another pan, brown hamburger.Make a cheese sauce using milk and cheese. I used cheddar cheese sauce this time. The measurements were approximately 2 cups of cheese sauce to 4 cups milk. Add hamburger and cheese sauce to veggies, bring to a simmer.

Add seasonings to taste. I used approximately 1 1/2 teaspoons seasoning salt, and 2 1/2 teaspoons pepper. (We are pepper lovers!)

Cook over medium heat, stirring occasionally, for approximately 5 minutes, allowing flavors to mingle before serving.

Perfect on a cold evening! The picture looks a little blurry because of the steam rising from the bowl.

For a variation, try adding one or more of the following:
1/2 cup salsa
1/4 cup diced pickles ( I have heard of this, but never have been brave enough to try it!)
1 chopped green pepper
Crumbled bacon
1/2 cup sour cream
