Thanks for coming back. Saturday, my husband told me that he had been craving a banana cream pie, so I, in my quest to be a loving wife (and with not the slightest thought in my mind that this would be good blogging material. . . well . . . maybe a little tiny thought), decided to make him one. I slightly altered
this recipe that I found on Taste of Home's website.
To make this pie, you need:

Pie shell, baked

3-5 bananas (2 mashed well), 3 egg yolks(slightly beaten), 3/4 cup sugar, 1/4 teaspoon salt, 1 teaspoon vanilla, 2 cups milk, 2 tablespoons butter, and 1/3 cup flour (I missed the butter and milk in my picture.)
Combine sugar, salt, and flour in a saucepan. Add milk and stir well. Cook over medium-high heat, stirring occasionally until mixture is thickened and bubbly. Cook and stir for 2 minutes longer. Remove from heat.

Stir a small amount of mixture into egg yolks, return all to saucepan. (This keeps the egg from cooking in clumps because of the sudden heat.) Bring to a gentle boil. Cook and stir for 2 minutes more. Remove from heat. Add vanilla, butter, and mashed bananas. (I added a few drops of yellow food coloring to make the pudding more banana looking.) Cool slightly.
Cover bottom of pie shell with sliced bananas. Pour filling over top.

Cool for 1 hour on a wire rack. Refrigerate until serving. Just before serving, garnish with whipped topping and banana slices.
