Something New


Growing up in a big family, whenever we had spaghetti, it was with meat sauce mixed right in with the spaghetti. Since I have been married, I have adapted to my husband's way of serving the sauce and noodles separate. However, we still have always made it with a meat sauce. Jason has been wanting me to try it with meatballs for the last couple of weeks, and so today I gave it a try. It was a big hit! I used a recipe from my Taste of Home Cookbook as a guideline, but adapted it quite a bit.

Here is what I came up with:

1 lb. ground turkey (I use this instead of ground beef. It is leaner, cheaper, and healthier.)
2 eggs
1/2 cup oats
1/2 cup grated parmesan cheese
1 tsp each of
minced onion
minced garlic
oregano
italian seasoning
1/2 tsp each of
salt
pepper

Mix together, form into 1 1/2 inch meatballs, place on greased baking sheet, and bake at 350 degrees for 25-30 minutes.

Next time, I am going to make extra to freeze.
